In a perfect world Skimmers wouldn't be so important. In theory all they do is remove Dissolved Organic Carbons.
In reality, they remove excess CO2, add O2, some ammonia, and provide a precipitation chamber for Phosphate. If things go south in your tank often a skimmer can provide just enough water stabilization to prevent an all out tank crash.
