Here is Wilbur, the guest of honor for our Christmas party... He has been seasoned and rubbed down and injected with a marinade.. He will be resting in my 120 quart coller for 2 days before being lovingly cooked. We are also having a hayride through the neighbor hood to look at the Christmas lights. The kids really love the hay ride...but they are scared of Wilbur.

when I was a kid our old neighbors had a pig roast every summer. I dreaded it. That thing was on the spit for what seemed like days. YUCK.

dont get me wrong... I'm not some tree-hugging, vegan-in-your face, anti-meat-industry, hunter-hating-hippie-chick with birkenstocks and socks on in the dead of winter. ...but I AM, totally and utterly, creeped out by that photograph.

What a traditional. I think the air in Miami, every Christmas eve, fulls just a bit with a hint of roast pig, it's that popular. My roommate's family does it every year too. Absolutely scrumptious.
