A friend of mine has a well established 30 gallon reef tank set up. He has had two clams die mysterously. They look great when you put them in . . . then night falls and when you get up in the morning something has eaten them. What could it be?

Are you talking about the cleaner clams? ??
you say they die -- do you see the shell remnants? or have the clams burry themselves?
You seem to have a lot of inhabitants ---
May want to get the water parameters from your friend.. Possibility that the clams didn't make it due to the number of residents in the tank and got eaten up after it died?

Clams can look OK right up to the hour they die. Once they die the cleanup crew quickly does it's job on what's left.
