Cooking for large groups

I have begun cooking Oneg on Saturdays for my Dads Messianic congregation. Currently there are around 50 - 60 people that show up.
what sounds good to you ? No pork products please ( for the kosher esque folks) or lamb ( i refuse to cook it out of princpal
) Today I made thanksgiving enchiladas turkey brea$t wrapped around dressing with gravy on top and the usual thanksgiving fixins on the side .aside from my aunt (who is b!tchy no matter what you make) ,every one seems to be satisfied , but i am running short of ideas because i cant use ham or pork that takes away alot of cuisine for a southern girl

any ideas - recipies ya'll would like to pass on would be greatly appreciated

Lasagna....made with a nice thick meat (beef) sauce....garlic bread and a salad
wow...that's a lot of people....lol....

HA, that was going to be my sudgestion but not so much a southern dish.

Baked chickens, with mashed potatoes, veggies of your choice, rolls and a huge cobbler.

I usually inject my chickens with with a mixture of fruit juice, black pepper, garlic powder and butter. Then season the outside with black pepper, garlic powder and paprika. Looks just like the rotisserie chickens you see at the store but tastes a million times better.

Lasagna may not be good if they are kosher.. No meat and cheese together.
A big pot of beef stew or chili is easy enough...

Do a Taco bar with tortillas (soft or corn/hard), cheese, hamburger taco meat. shredded chicken, chredded beef, green chile, red chile, tomatos, onions, and shredded lettuce with side dishes of refried beans, mexican rice, and mexican style corn........

Again, depending on whether they are kosher or kosher-esqe, there is no mixing of meat and dairy. If they're sticking by the no pork rule I would guess they are sticking with that one too..

Spaghetti Give them Parmesan on the side for the non Kosher folk
BBQ Chicken
Taco Bar is a good Idea. Just make sure the cheese is in a separate area so the utensils used for the cheese wont touch the other stuff
On the Lasagna I know this might be sacrilege in Texas but Veggie lasagna ain't bad.

LOL, they would starve at my house. We live by the rule "You get what you get and don't pitch a fit". I would think the taco bar would be a good compromise. Its not like they have to put the cheese on their taco. I mean dosn't it have to be a kosher kitchen for it to be really kosher anyway?

Yeah, but they arent coming to her house for dinner, she is going to their place of worship for a meal after a religious ceremony. That's what an Oneg is.
It all depends on how "kosher" they are. I know of some people that just dont eat pork, milk and meat together or shellfish and I know of others that will not eat anything, anywhere unless they know for a fact that the dishes they are eating from and the pots that things were cooked in where never mixed meat and dairy.

im pretty sure the extent of kosher we got there is no pork or ham products i havent run into any no meat and chees together problems yet , i like the taco bar i thought about doing a train wreck(slang) but just havent done it yet

Hook up with a puerto rican person and get a good rice and beans recipe.
They may use ham bullion, but you can easily omit it.
That could include chicken pieces in the rice, & potatoes in the beans. It can include lots of things and can definitely feed lots of people.
And as mentioned, spaghetti. That goes pretty far. And really, who doesn't love pasta?

I cook once a year for our corvette BBQ, last year I cooked for 120 people.
60 pounds of beef, get clods if you can. Split it up and cook it in dutch ovens with rub and beef broth. Once tender, shred it and add a couple of gallons of BBQ sauce, serve on buns.
I also made potato salad with 25 pounds of potatoes.
And 5 double batch's of brownies.
No one died so I get to do it again this spring!

Couldn't get much simpler then a couple trays of Chicken and Dumplings. Guess it wouldn't work if it's outdoors, but pretty sure it's in?

Time for the MASTER of the large group. More than one time I cooked for my Mens Group and let me tell you this 30 men can and DO EAT. I made a Beef BBQ before also Beef Stroganoff and however with Pork off the menu my Pork Shoulders are a No NO.

yay dumplings those are for week after next
i had thought about doing a soup like a split pea or chicken noodle and having a baked potato and salad bar would you like that ? or does it seem cheezy
