do people really have 0 nitrates in their tanks

My nitrates have tested clear for over 5 years.
I'd prefer to call it "undetectable" because they certainly can't be absolute zero.

Sure. "absolute zero" nitrates could only be possible in a sterile tank; with nothing to produce ammonia to start the whole process. My reef is finally staying <5ppm; I'd like to see "zero"; just for the sense of accomplishment. But I'm done tweaking things for now. In this hobby/addiction; "zero nitrates" sure adds a little credibility to the tanks owner.
(Wait! I never "bowdown" to anyone, except my GF when she's being difficult. At my advanced age, principles often must be sacrificed.)
