Exotic meats ...

In response to an interesting thread, I'd thought it would be interseting in what exotic meat/food you have tried.
I know a couple of them are not really exotic but can be found around these parts.
I love buffalo meat. They are much, much leaner than the ground beef found in stores and they do cook faster. I haven't tried bufflao steaks yet though.
Venison - THE BEST meat ever !! Especially the jerkys.
These I would love to try :
Elk
Alligator
Shark
Raccoon - saw an episode on deep southern food on the Food Network.
Possum - ditto
Bear - I've heard they're stringy to eat.
Moose
Ostrich - I know we can get them but never got the chance to try them.

Shark is very good. Right out the ocean, clean it but don't skin it. Cook it slow on the grill w/ lemon juice.

I've had a couple, some probably aren't really exotic, just stuff you don't eat everyday.
I love buffalo, it is so lean and tender.
Alligator isn't bad.
Shark is ok.
Elk is really good. So is deer.
Not a huge fan of quail.
And I know its blasphamey but I love raw tuna and raw scallops

Smoked sturgeon, oyster's, yum. I think opossum would be nasty. Some bear meat is very oily it depends on there diet. i.e. salmon diet oily meat.

Sharks.... blacktip,swordfish not too thrilled
Many flavors of SW are yummie, Amberjack is tops
Mahi Mahi comes up there too.
Anything SW is awesome EXCEPT the Calamari I had. YUCK!

Goose, shoot 'em give 'em to your enemy, tell 'em their GOOD!
Will not eat possum or coons...they have thumbs!

how is this exotic? The only thing you won't find in the back woods is an ostrich. Squirrels taste pretty good too.
Who didn't know that there is techincally an O infront of possum?

That was fun thing to do as a little kid, Till the catfish wouldn't let go of my hand, or come out of his hole, and I was underwater... It was a battle, he tasted sooo good we cooked him on an open camp fire.

I wouldn't consider some of the stuff mentioned here as exotic.... but I've personally had some exotic stuff at sushi bars around the country (note that most of this was raw):
octopus
sea urchin
snails
squid
eel
fish roe (from various species)
tons of standard raw fish species, though most of which I wouldn't consider exotic
I've always wanted to try fugu, but alas, because of our laws in the states, that'll have to wait until I make the journey to Japan.
