my peppermints and cleaner all do that. They hardly ever come out. Except for food.
On a side note... Last night I saw something strange in my water column after the light has been out for about 20 minutes.
It was millions of tiny tiny tiny baby shrimps!!!! You could see the little tails and claws and everything! They were soooo small!!

When it happened in my tank the fish went on a feeding frenzy. Was not long after lights out that is happened.
Thats the weird thing though. None of the fish cared. They weren't eating them, which I thought was kind of queer.
I just wish I could have gotten a video or something of those awesome little guys! It was a really really cool thing to have seen.

I'm glad I finally read this about other folk's peppermint shrimp!
I have 3...I think...1 hangs out in a corner where I can see it, haven't seen the other 2 since they went into the tank a month ago. I know they are in there, I see molts, but no other evidence of their existence.

My skunk cleaner shrimp Lysmata amboinensis is the same way. Only comes out when the lights are off.
Same here! It doesn't even come out when I feed
