How tall is your tank itself??? I would put 2 inches of LS since I think the 10 gal isn't that tall if it's regular 10.

How about for a 75 gal regular sized? I am going to use Southdown seeded with LS. I've heard 4-6"? I will have a FOWLR plus some hardy inverts.

There is currently some rethinking on DSB's. I will continure to recommend 3+ inches depending on your expected bio-load. A fish-only to me implies a heavy bio-load so closer to the 6" mark would be better.
I still recommend DSB's because in my experience they work and make the tank more stable than other filtration systems.
I don't recommend DSB's for tanks with a foodprint smaller than a 29 gal. In my limited experience these DSB's don't work. Just a guess but I don't think the smaller sandbeds can support enough diversity to keep the sand healthy. The 1/2" - 1" seems to work very very well though, just no Nitrate reduction.
