Get some of that Louisiana fish fry...coat the catfish, and deep fry till it is light golden

If you are fileting this yourself....make the filets on the thin side...thick catfish IMO is yucky

Who said I was going to eat MY catfish?
 
make a milk and egg mixture, and let the fish sit in that. then coat in seasoned all purpose flour, and fry at 350 degrees.

If you really want to cook it properly you need to coat it in cornmeal mix.
I mix corn meal, flour, garlic powder and creole seasoning. Dip it in a milk and egg mix then coat with the corn meal mix. Fry and enjoy.
Or you can bake it. Sprinkle a little garlic powder and creole then bake at 350 degrees til white and flaky.

In my neck of the woods frying catfish is all about simple, usually because it is done directly after catching the fish. No egg washes or milk just shake in a paper bag with cornmeal, black pepper and salt. Fry in peanut oil (very important for that southern fried taste)@ 375 and Drain on paper towels in a large brown paper bag (I really don't no what the paper bag imparts it's just the way it has always been done).
Lately though I have really become enamored with a dish @ my cuz's restaurant called Catfish Leon. It is a char-broiled catfish filet covered in crawdads with a brown butter cajun sauce. Gar-on-teed ta fic wat ails ya!
I haven't tried to do it yet but, grilling catfish filets is become pretty popular around here as well.

Each to his own, but no self respecting southerner would ever put flour on their catfish. Throw your
filets in a brown paper bag with some cornmeal. Close the bag and shake it a few times. Now throw the filets in some hot peanut oil. Fry until golden brown. Serve with hushpuppies and cole slaw.

To me, catfish tastes like a freshwater aquarium smells - of pond, algae and silt...
Lovely, earthy smell.
Horrible flavor.

everyone has there own taste, but never question my southern cooking

I forgot to mention to place the catfish on a bed of cheesegrits.... now you are ready to eat! is that better?

Tell your cousin to stop watching Gordon Ramsey's cooking shows. Southern catfish will never be a gourmet food, thus should never have a gourmet name.......

Catfish Leon sounds more like the name of an old blues singer than gourmet food.

Try some farm(pond) raised channel catfish. I bet you will like it.

I dunno, that sounds good, just because it has a fruity name doesn't mean that it doesn't taste good. I might try that with some flounder...

I don't use that much flour. I've just found that if you add a little to the cornmeal mix it holds to the fish better. The mix is mainly cornmeal. I wouldn't want to eat catfish fried in a flour only coating...bleh... This is how my family and I fix it. Never a piece left. lol The baked catfish is pretty good too.

Shoot!! I been eating gourmet food and didn't even know it. As to "Leon" I'm not sure if he was a blues singing Louisiana fry cook , but I know that if I don't get some of that fish every now and again it gives me the blues.
