I caught a salmon on the American River in Sacto that was 37#, but since I didn't have a license I didn't get a picture, cause I stuffed it in the trunk and fled the scene ASAP. Before you say how wrong it was, I was 19 and it was 1987. I can't fish or hardly eat fish/seafood anymore. I always think, "I bet I could put a tank together that that thing could live in..."

Biggest thing I ever caught was a Carp.... I mean Golden Bass that had to be in the 35 to 40 pound range. I was fishing the Colorado river and thought I was snagged on a log until it started swimming up stream.

It's akll in how you prep it. Properly opreppared flathead is the best eating fish ever.No matter how large.

Eating flat head is like eating carp, an acquired taste I don't care to acquire

One of the best tasting fish I ever ate I caught out of a cold or at least cooler water lake in northern Idaho, it was a channel cat. The thing fought like a trout and had a different taste than the catfish I used to catch in SoCal. Not that the warm water Catfish isn't tasty, this was just better IMO.

Again I say preparing it properly is the key. IU have never ever had channel cat or blue even that tasted as good as flathead....never...My wife and I ate at Hemingway's is Bass pro awhile back. She had the catfish, she did not like it at all. But the Flathead, she tears it up. Thee trick is to cut away all the red and the yellow, you dot want that.
Take the fillets and slice them across the grain. Then butterfly so as to not be more than 3/4in thick anywhere. Now you've got butterfly catfish chops....
Then rinse the meat thoroughly until it is cottony white...Bread in zatarain's fish fry mix, deep fry just till it floats and is golden brown.....OH MAN that's good stuff!

LOL...I had never had catfish before I came to OK...My husband took me to a Catfish King, and they all had to come see the person who had never had catfish...it was kinda embarassing...now that I think about it

also the state says we shouldn't eat any catfish or carp around here because they are nasty bottom feeders.

im goin to have to scan some pics caught some bigguns about 14 years ago then i moved to az i am back in oklahoma now already been juggin yeeee hawwwww
