Reef temperatures

There are definanlty large temp changes within a reef. Just go snorkeling in Hawaii, the water in the shallower parts is at least 5 degrees different. The fish swim right though it with no problem. BUT, they also are eating live everything, constnatly eating fresh food and seaweed, and the ph and everything is perfect. I had this argument before with someone, but they said an aquarium has so many other factors that are not as healthy as the real ocean, that you should try to at least keep control over what you can to lower stress (constant temp and salinity etc).
I head that lower temp keeps fish's metabolism slower, so it produces less waste? That could be a factor... In the summer my tank is between 81-84 all the time, usually goes from 82 at night, back to 84 in the day. They seem best in the winter when its around 80 and the sun is shining in on the tank.
