Adding more live rock won't mess up or restart the cycle. It will actually make it go faster. I added like 60 lbs of LR in the middle of my 55 gal cycle and it just kept on cycling like it was supposed to.
PS: In a few months your gonna have wished you went with a 75 gal.

Not true on any accounts, in my opinion.
A cycle will be disturbed by adding more live rock because the new live rock (assuming it is uncured) will cause the ammonia to respike, or go up higher, which will certainly prolong the cycle. The only way it would not is if the OP added cured rock to the tank.
I also do not feel he will be wishing he went with a 75. The only difference between a 55 and 75 is 6" in depth. Not that big of a deal. He might, however, wish he went with a 125 or 180 in about a year because, well, don't we all?

Well I wish that I went with a 75 gal instead of a 55 so that I could get a small tang. I also don't really like how the 55 is so thin. Its really hard to aquascape.

Meh, I would not put a small tang in a 75. If you put one in a 75, I don't see anything wrong with putting one in a 55.
A friend of mine kept a powder blue in her 46 bow for quite a while (until she got her 120) and while being in the 46 bow, she got the tang to eat pellets and come up to the surface to eat from her hand. That extra 6 inches does not make that much of a difference for fish, in my opinion.

yah it could, but there are few that are reef/invert safe, but if you went aggresive I THINK you could pull of a niger trigger or something of that sort
