It's very delish. I'll just post the recipe.
Butternut Squash Casserole
1 Medium butternut squash, diced
1 Medium onion, diced
3 Tbsp butter
2 Cups snack crackers, crushed
1 8oz. bag cheddar cheese
1 egg
1 1/2 to 2 Cups milk
pepper to taste
Saute the squash and onion in a pan with the butter til slightly tender. Mix the crackers, cheese, egg, milk and pepper til moistened. Mix in butternut squash mixture into the cracker mixture til well blended. Place in glass casserole dish and bake at 350 degrees for 35-40 minutes or until golden brown on bottom. Can top with more cheddar cheese on top and put back in til gooey.

Homemade Cordon Bleu! Or "North Carolina Sandwiches" Chicken breasts wrapped in bacon, covered with sliced ham, and extra thick swiss cheese slices overtop, on your favorite bun.
