The blue "eyeshine" you're seeing is the retinal tapetum lucidum, which is a membrane on the fish's retina that acts as a light amplifier so the fish can hunt in the failing light of the evening, which makes sense, given that lionfish are crepuscular hunters. In some fish, you can see this as a lightning bolt type appearance (there's a good pic in our lionfish care article).
Since lions have such large eyes, it's one of the first places ectoparasites (Crptocarion, eye flukes, etc) show up. Don't be alarmed if the fish temporarily has slightly cloudy eyes, as it's possible that the fish is ready to shed its cuticle, which covers its entire body. This cuticle can be shed periodically to rid the fish of algae, critters, and pathogens, and is one reason why lionfish are so disease resistant.
