like to fix your cornbread?? I know this seems random but I was baking some cornbread tonight and was wondering how everyone else fixes theirs. I make my batter then add onions and jalepenos, ladle half full in the muffin tin then add cheddar cheese and put the other half on top.
So how do you like your cornbread??

Sounds TOO BUSY for me, but then again, never tried it like that, I like my CB with just a little sweet cream butter!

I like it that way too....this is the only way my stepkids will eat it though. lol They get mad at me if I don't fix it with the cheese, jalepenos and onions.

plain- not sweet - heat some oil in the pan before pouring the batter in so the edges and bottom are really crunchy

I like my cornbread moist. A little extra oil in the dough makes it a special treat!
Serve it with great northern beans or red beans and rice. Also goes great with gumbo!

I usually eat mine with crockpot beans or stew....
But, I do love me some red beans and rice.....

Of course cast iron is the key to really cooking cornbread....but,alas, I do not own any....
. One fo the few important pans I don't own!!!

We had corn bread with our chili tonight!!!
We just make the Jiffy stuff and put it a muffin pan and it makes about 5-6 muffins of CB!!!

LOL +1...except I add extra sugar....People here in OK tease me cause I am originally from NY...they call mine corn cake...LOL. But my hubby likes it that way too so it works great.
