I was always able to get my live rock to cure in 7-9 days flat with these steps
Do exactly what your doing now EXCEPT do a 95% water change every day even 2 times a day if you have time
My rock did not have plant life on it though so I am sure this would not work with un-cured rock.
 
Ok I've been doing water changes every one to two days and there are still traces of ammonia.25-.5. this is taking long lol. When I do a 95% water change most of the rock is exposed to air. Will this prolong the curing process? It's exposed for a minute tops, but would this create air pockets in the rock? If so would that prolong the curing process? Is it wise to use old water from my DT after a water change and use it for a water change on the curing tank?

Exposing your rock to air for a few minutes isn't going to harm anything as long as you removed all of the big sponges before starting the process.
Using old tank water is fine. It's no benefit but it will not hurt to put new saltwater in your display tank. ;)
