I was a manager at McDonalds for several years, prior to college, and I still love their food. As for sandwiches sitting under a heat lamp, the holding bins are gone and have been for about 16 years.The transfer bin is heated, but sandwiches are made to order now. I suppose if something is made and for some reason it isn't immediately taken by the customer who ordered it, it might get left on the transfer bin. But that is rare and only happens if the order is cancelled after they make it. I had my cholesterol tested every quarter and I had extremely low levels and I loved the bacon and deep fried stuff. I understand some McD's are ran poorly and the food suffers. The main culprit of greasy food is when the shortening is old. Instead of cooking out of the products, old shortening sticks to it and soaks in the product.
