NEED food smoker HELP!!!!

I own seven different grills....don't ask why, I like options. Charcoal is always my preference. We threw a new years party one year, cooked all the food outside...I mean all...had all seven going...that was intense....neighbors thought I was crazy grilling in winter...muchless with sev en grills......one called cops on us..not cuz of party..but reported us as starting an. Illegal fire. Cops stayed for about 25 minutes sampling everything.

Back when I was a kid we made a couple smokers out of old refrigerators with steel interiors. Those things worked great. The smoker I have is about the same thing, even has a magnetic rubber seal around the door like a refrigerator. With those you just built an external fire box and piped it into the back. Even used the steel racks that were original to the refrigerators.
That fridge thing is what a lot of the higher volume bbq places use, and up in the NW to smoke salmon. (which btw is something awesome to do on your smoker)

That is the best way to get out of an issues, offer em good free food...

Just did salmon, expensive but tasty. I finished off the last of it a couple days ago. It had been in the fridge a week or so and was better than when it was fresh out of the smoker. Got to remember that for future reference. Let is cure after smoking.

How do you serve up your salmon? I've never tried smoking salmon, I need to try it. I've only had cold smoked salmon on crackers with minced onion.

Alder is what I used. I've heard Pecan is good too. Someone told me to try Mesquite. Dunno, maybe if I could get a good deal on the salmon.

I like apple on pig, I mix it with maple. One of the nice things about this smoker is it's really simple to mix woods, just make sure you don't leave the disks out of the pack, otherwise you end up with mystery smoke.
I have a box that is shredded Jim Beam Whiskey barrels I need to try. I assume it's oak.

Bet that whiskey barrel wood would be great to smoke a turkey with....

IMPORTANT QUESTION
If you cut down a hickory tree....How long before you can use the wood in the smoker????

I have done it immmediately and a year after cutdown...not. much difference as you soak the wood in water first anyway.

Thanks.....having our get together on the 30th, and I wnat to make a whole turkey, and a fresh ham....LOL....the family will be my guinea pigs

I think I will have to cook them separately though as they take up the WHOLE smoker, and that would leave no "air" room

As long as there is at least a little room for the smoke to get around each piece of meat you should be able to do them both together.
A friend of mine and myself are entering our first BBQ competition in September. We've gotta cook 24 racks of St Louis ribs on his smoker and our 2 Weber kettles. Should be interesting trying to squeeze it all in them.
