ok... Traveler, any other ideas.. for variety?
Anyone know some really good lunch recipes that I could take to work besides a cold meat sandwich? I have a microwave, stove, and oven available at work.

That is yummy. I used to make that for lunch all the time. Try adding fresh fruits and veggies with each meal.

Whole wheat pancakes. I like everything that I've listed in my other post, but I do not like the taste of whole wheat pancakes. But, it wouldn't hurt to try.
For more flavor then just oatmeal, you can add fresh fruits to it. (Of course organic is best.)
Obviously you could just do fresh fruits for breakfast, but I would NOT be able to eat just that.
For a snack, make your own home made granola bars. All of the trail mix, Kashi Go Lean, etc. stuff is crap. Might as well have a candy bar compared to any of them. Read the ingredients and you'll see why.
Here is the recipe I use for making granola bars. All the nuts can be substituted, so can the dried fruits, etc:

Ingredients

  • 8 ounces old-fashioned rolled oats, approximately 2 cups

  • 1 1/2 ounces raw sunflower seeds, approximately 1/2 cup

  • 3 ounces sliced almonds, approximately 1 cup

  • 1 1/2 ounces wheat germ, approximately 1/2 cup

  • 6 ounces honey, approximately 1/2 cup
1 3/4 ounces dark brown sugar, approximately 1/4 cup packed
1-ounce unsalted butter, plus extra for pan
    2 teaspoons vanilla extract
    1/2 teaspoon kosher salt
6 1/2 ounces chopped dried fruit, any combination of apricots, cherries or blueberries
Directions

Butter a 9 by 9-inch glass baking dish and set aside. Preheat the oven to 350 degrees F.
Spread the oats, sunflower seeds, almonds, and wheat germ onto a half-sheet pan. Place in the oven and toast for 15 minutes, stirring occasionally.
In the meantime, combine the honey, brown sugar, butter, extract and salt in a medium saucepan and place over medium heat. Cook until the brown sugar has completely dissolved.
Once the oat mixture is done, remove it from the oven and reduce the heat to 300 degrees F. Immediately add the oat mixture to the liquid mixture, add the dried fruit, and stir to combine. Turn mixture out into the prepared baking dish and press down, evenly distributing the mixture in the dish and place in the oven to bake for 25 minutes. Remove from the oven and allow to cool completely. Cut into squares and store in an airtight container for up to a week.
Well, that's not exactly it but ALONG THE LINES of it. You get the idea...

Also, for lunch, eat a salad. Size doesn't matter.
Organic greens, such as Arugula, Romaine Lettuce, and Kale. Throw in some carrots and cherry tomatoes.
For a dressing, do some olive oil. Obviously non-processed organic stuff is better, but it's almost impossible to find.
Then, you can top the salad off with these following ingredients for protein:
-Various Seeds. Seeds are EXTREMELEY healthy. Not to mention that they are filling, and an excellent source of protein.
-Tofu. Even though it is quite gross if not cooked right, pan sear it and it's pretty good actually.
-Meat. 'Nuff said. Organic, free range, etc., is best. Stuff that you shot yourself is great too

-Fish/Shrimp/Seafood. As long as it's not from your tank. LOL. And, also make sure it's wild caught. The growing conditions of farmed seafood is utterly disgusting.

lol, traveler, you sound like a health nut. Thanks for all the help. Thanks Jeff as well...
Well, when I was eating salads for lunch, I was loosing weight. I just got tired of eating salads for lunch. I guess I could try it again and see what happens.
I always heard that eating some type of protein in the mornings to breakfast is really healthy. I've gone so far as to eat a little piece of steak or chicken in the morning. Surprisingly, it actually satiated my appetite till dinner. Maybe I need to think about doing that again. I guess I need to start planning out my meals better. My wife and I eat out a lot, and I bet if I could just eat at home more often, I would loose more weight. The problem is getting the better half to eat at home more often. (Love you hunny!)

Not eating out would also be a big money saver. If you want to eat out, choose places that have half plates and healthy options. Don't go to some place you will be tempted to over indulge.

I don't go to buffets. I guess if I do eat out, I could ask for a to go box at the beginning of the meal and half my food before I start eating. I've done that before - I probably should have kept doing it.
I'm just looking for simple changes to my diet and lifestyle that I can do, and keep doing.
Breakfast foods: (not meals)
eggs
whole cereal
skim milk
breakfast bar(s)
fruit
Coffee (with a little sugar, until I can ween myself off)
Work Lunch:
salad with the fixin's and go light on the caesar.
lunch meat sandwiches, easy on the mayo or use light mayo.
warm up soup / chili etc. in single serving size.
wheat pasta and veggie thingy (I'll give it a try, Jeff.)
Suppers:
Half my portions and avoid desserts
Foods that I should avoid:
sweet desserts
ice cream :(
chocolate :(
soda pop
processed foods / boxed / canned
simple sugars
I'm a natural endomorph, so all it takes for me to gain weight is to just look at food. To get to a normal body weight, my food portions will look small compared to the average person.

You can also get the Yoplait whipped yogurt (they have a low cal/ reduced fat) and freeze it. These should be a cheat dessert alternative to the more fattening ones.

I'm just looking for simple changes to my diet and lifestyle that I can do, and keep doing.
Breakfast foods: (not meals)
eggs good
whole cereal good
skim milk good
breakfast bar(s) Be VERY careful here. Read the ingredients. Most seem all "healthy" or "low carb" or "low cal" or "low fat", when it's all just crap. Be VERY CAREFUL.
fruit How can I say that it's bad? But, organic if/when you can.
Coffee (with a little sugar, until I can ween myself off) If you only put in a teaspoon or 2 of sugar, don't worry about it. Try raw unproccessed sugar too.
Work Lunch:
salad with the fixin's and go light on the caesar. good. But try olive oil. I actually prefer it a lot more than ceasar or anything. Not to mention that most commercial dressings have flavors + colors added to tehm.

lunch meat sandwiches, easy on the mayo or use light mayo. Light mayo... ewww. Instead of light mayo, which is very bad for you and just tastes worse imo, go for mayo from grass-fed cows, organic, etc. Also make sure that there are no flavors added to the mayo. You'd be suprised how many times I've seen colors and flavors added into mayo.

warm up soup / chili etc. in single serving size. Caution there too. Some are better than others, not in terms of fat or calories, but in terms of preservatives, colors, flavors, flavor enchancers, etc. Better than everything, make a BIG pot of Chili, soup, etc. over the weekend, and bring it to work. The ingredients are 100X better, and it'll save you $ in the long run....

wheat pasta and veggie thingy (I'll give it a try, Jeff.) Good advice Jeff.

Suppers:
Half my portions and avoid desserts Why half portions? See WHAT you eat, not how much of it you eat. You should NEVER be hungry, because it will cause your body to go crazy inside and then you'll have cravings for the worst foods. Avoid... well you know what to avoid: colors, hydrogonated oils, ETC...

Foods that I should avoid:
sweet desserts
ice cream :( Correction: MOST ice cream. I have seen some good quality ice cream in regular grocery stores with no colors, preservatives, etc. And you won't believe how good they taste. For weight loss, limit it still. Just, under any circumstances, AVOID at all costs, the "skinny cow" ice cream, etc. Read the ingedients on the back. When I did to some, the only thing that I saw was "cancer, early death, diabetes, heart disease, indigestion, ALL THE ABOVE" The sheer amount of bad ingredients was shocking.

chocolate :( Correction: MOST chocolate. Commercial chocolates, like "M+M's, Reese's, Kit-Kat;s" are what you should avoid. GO and try to find some whole, dark, unprocessed, organic, raw chocolate. It's not only not-bad for you, it's actually good for you.
soda pop Not exactly soda pop, but I have a great recipe for Ginger ale if you want it. And it's a LOT better than the commercial products. Most (99%) ginger ale on the market today is: High Fructose Corn Syrup, Caramel Color, Flavors. Nothing ginger about it.
processed foods / boxed / canned Basically what all my writing is about. :)

simple sugars

The problem with the food that you say to buy costs 3x more than what I can afford. I have a $150/month budget for food. Peanut butter, sandwich meat, salad, chicken breast, pork, round steak, milk etc. I can't really buy all this extra bells and whistles. That's why I'm cutting my portions in half and watching my sweets. My main meals come from lunches with my boss at my work place. I think if I switch from whatever they are having to a salad or sandwich, I will save quite a few calories.

I know what you mean. Heck, we can't get all the bells and whistles either. I think that what you have so far, the salads, etc., will definitely be helpful It sure wouldn't hurt. Just make sure that it's not worse than what you already eat. I've seen some foods that are supposedly "healthy" that are in fact the same or even worse than junk food. such as artificial sweeteners.
And, isn't your boss your dad? LOL.

So I didn't want to step on the scale. But I forced myself to this morning.
It didn't look good at all, in fact, it's downright horrible!
I weighed in at 232lbs.
That means I have gained roughly 20 pounds since my wife has gotten pregnant.
Is it my lax attitude about food while she is pregnant? Maybe. I do tend to overeat more often and she snacks pretty often and I snack with her. I haven't picked up drinking soda again yet though, so all the extra weight is extra food and desserts.
The question is: should I try to loose weight now before Emma is born or should I just say to heck with it and wait till after? What did you all find easiest?

I know what I should do to loose weight,.... Cut portions, no seconds, no desserts. It's not like it's a total mystery. I picked up eating my moms good food for lunch again. I could eat a salad or sandwich for lunch and cook something healthy for supper and watch my portions. But the question is: should I diet while my wife is preggo? Not really that easy.
