The freshwater dip shouldn't hurt anything. I do it to all corals I get before I put them in my tanks and I've never had a problem.

I have a prizem that does that. Of course it does that when I add water, change water, or add chemicals to the tank. I just turn it down for a couple of days and things usually go back to normal.

depending on how big your tank is, you could also look at a diamond goby. with any of them, make sure you have a lid on your tank, cause I know from experience the diamond is a jumper, and I think the other two are also, not 100%.
