I am not a big fan of snails for the exactly the reason you specified. I know they are a great help with the algae control but when one of those guys kick the bucket(especially the large ones) and no one eats them....you enter a mini cycle that can turn large when the ammonia starts to build...

I have seen my sand with the same problem. I have a queen and fighting conch in my tank...I think they are suppose to take care of the sand. As for my personal experience, I find the queen conch a little more active.

Have you recently shifted the sand bed around or increased the lighting for your tank? You might also want to do a check on feeding amounts for your tank including checking your water conditions including calcium levels. Do you have any signs of brown algae around?
